Pune’s Ghat Vegetables

Rose among vegetables, looks like. These Pune’s ghat (mountains) brinjals grow prickly thorns perhaps to protect themselves from predators. No worms inside either.

Soft to cut.  Enjoyed making several dishes out of it often.  Favorite among them was light saute with capsicum and potato wedges.  Wee bit of salt, pepper, rice flour, red chilli powder, turmeric, asofoetida, carrom seeds all mixed with cut vegetables, kept aside for 5 minutes and stir fried in little oil, turning them from time to time.  Came out crispy.
